Galette des rois with jam

What could be better than world champion jams to accompany your galette des rois?
Ingredients :
For the puff pastry:- 2 rolls of puff pastry (ready-made or homemade)
- 125 g of soft butter
- 125 g of powdered sugar
- 125 g of almond powder
- 2 eggs
- 1 tablespoon of flour
- 1 teaspoon of vanilla extract
- Lemon zest (optional)
- 150 g of jam of your choice (red fruits, pumpkin cake, lemon-mint zucchini, etc.)
- 1 bean (for the tradition of the galette des rois)
- For the gilding:
- 1 egg yolk
- 1 tablespoon of milk
- Preheat the oven to 180°C.
- In a bowl, mix the soft butter, sugar, almond powder, eggs, flour, vanilla extract and lemon zest (if using) to obtain an almond cream.
- Spread a roll of puff pastry on a baking tray lined with parchment paper.
- Spread the almond cream over the dough, leaving a free edge.
- Place the jam of your choice on the almond cream. Be careful not to spread the jam all the way to the edges.
- Insert the bean into the filling, pushing it well toward the center.
- Cover everything with the second roll of puff pastry. Seal the edges by pressing lightly with your fingers.
- In a small bowl, mix the egg yolk and milk for the egg wash. Brush the surface of the pancake with this mixture.
- Using a knife, make patterns on the surface of the pancake without piercing the dough.
- Bake for about 25 to 30 minutes, until the pancake is golden brown and well puffed.
- Let cool before eating. Traditionally, the person who finds the bean in their share becomes the king or queen for the day.
